 Miss Hoares Belizean Style Chicken Tamales.

Belizean Chicken Tamales are cooked to my Belizean Mother in Laws recipe, Chicken is cooked in a Recado Sauce till tender, it is then placed on a Corn Dough the remaining sauce is then thickened with corn meal and poured over the meat, the Tamale is then wrapped in a Banana leaf and then tin foil and steamed for 2 hours till cooked.

Best served with a nice salad and a big slosh of Belizean Fire Hot Sauce. Always eat them hot

The Belizeans like to leave the bone in Chicken Tamales for taste and so do I.
