Mexican Turkey Tamales. This is the trditional meat filling for Tamales in Mayan Mexico.

Turkey thigh is cooked in our mixture of herbs and spices. Once cooked some of the broth is used to make the Masa and the rest is made into a hot sauce to moisten up the Tamale. To make the sauce we fry Onions, Chillis and tomatoes then add the broth and a little corn meal to thicken then cook out for 30 mins, this is then added to the ground Turkey to make a moist filling.
